Apple Cinnamon Cake

A moist, warmly spiced apple cake loaded with fresh apple chunks and finished with a crunchy brown sugar crumb topping.

Ingredients
  

2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
2 large eggs
3/4 cup granulated sugar
1/2 cup brown sugar
1/2 cup neutral oil
1/2 cup applesauce
1 tsp vanilla extract
2 1/2 cups peeled, diced apples
Crumb topping: 1/3 cup flour, 1/4 cup brown sugar, 1/2 tsp cinnamon, 3 tbsp cold butter

Equipment

  • 1 large mixing bowl
  • 1 medium bowl for the topping
  • 1 whisk
  • 1 rubber spatula
  • 1 9 x 13 baking pan

Method
 

Preheat oven to 350°F. Grease and flour a 9x13 pan.
    Whisk dry ingredients together in a large bowl.
      Add eggs, sugars, oil, applesauce, and vanilla. Mix until just combined.
        Fold in diced apples.
          Make crumb topping by rubbing cold butter into flour, sugar, and cinnamon.
            Pour batter into pan, scatter topping over surface, and bake 40 to 45 minutes.
              Cool 20 minutes before slicing.
