Chewy Caramel Apple Cookies with Cinnamon Glaze

Soft, chewy cookies packed with jammy diced Granny Smith apple and melted caramel pockets, finished with a drizzled cinnamon glaze.

Ingredients
  

1/2 cup browned butter (cooled), 3/4 cup brown sugar, 1/4 cup granulated sugar, 1 egg + 1 yolk, 1 tsp vanilla (wet)
1 and 3/4 cups flour, 1/2 tsp baking soda, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp salt (dry)
1 cup finely diced Granny Smith apple (patted dry), 3/4 cup caramel bits (mix-ins)
1 cup powdered sugar, 2 to 3 tbsp milk, 1/2 tsp cinnamon, pinch of salt (glaze)

Equipment

  • 2 Baking sheets
  • 1 parchment paper or silicone mats
  • 1 medium saucepan for browning butter
  • 1 large mixing bowl
  • 1 hand mixer or stand mixer
  • 1 rubber spatula
  • 1 cookie scoop
  • 1 small bowl and fork for glaze
  • 1 wire rack

Method
 

Brown butter, cool to room temperature.
    Dice apple finely, pat thoroughly dry with paper towels.
      Beat brown butter and sugars 2 minutes. Add egg, yolk, vanilla. Beat until smooth.
        Mix in flour, baking soda, cinnamon, nutmeg, salt on low until just combined. Fold in apple and caramel bits.
          Chill dough 30 minutes. Preheat oven to 350 degrees F.
            Scoop 1 and 1/2 tablespoon portions onto lined sheets 2 inches apart. Bake 10 to 12 minutes until edges golden, centers just set.
              Cool on sheet 8 minutes, then transfer to rack. Whisk glaze ingredients and drizzle over fully cooled cookies. Set 10 minutes before storing.
