Chewy French Toast Cookies with Maple Vanilla Glaze

Soft, custardy cookies flavored with brown butter, cinnamon, maple, and vanilla, rolled in cinnamon sugar and finished with a drizzled maple vanilla glaze.

Ingredients
  

1/2 cup browned butter (cooled), 3/4 cup brown sugar, 1/4 cup granulated sugar, 1 egg + 1 yolk, 2 tsp vanilla, 1 tsp maple extract (wet)
1 and 3/4 cups flour, 1 tbsp ground cinnamon, 1/2 tsp baking soda, 1/4 tsp nutmeg, 1/4 tsp salt, 1 tbsp milk (dry + dairy)
3 tbsp granulated sugar + 1 tsp cinnamon (cinnamon sugar roll, optional)
1 cup powdered sugar, 3 tbsp maple syrup, 1/2 tsp vanilla, 1 to 2 tbsp milk, pinch of salt (glaze)

Equipment

  • 2 Baking sheets
  • 1 parchment paper or silicone mats
  • 1 small saucepan for browning butter
  • 1 large mixing bowl 1
  • 1 hand mixer or stand mixer
  • 1 rubber spatula
  • 1 cookie scoop
  • 1 small bowl for cinnamon sugar roll
  • 1 small bowl and fork for glaze
  • 1 wire rack

Method
 

Brown butter, cool to room temperature.
    Beat brown butter and sugars 2 minutes. Add egg, yolk, vanilla, maple extract. Beat 1 minute.
      Mix in flour, cinnamon, baking soda, nutmeg, salt on low. Add milk and mix briefly. Chill 30 minutes.
        Preheat oven to 350 degrees F. Mix cinnamon sugar in shallow bowl if using.
          Scoop 1 and 1/2 tablespoon portions. Roll smooth, then roll in cinnamon sugar. Place 2 inches apart on lined sheets.
            Bake 10 to 12 minutes until edges set and center looks just done. Rest 5 minutes on sheet then transfer to rack.
              Whisk glaze ingredients. Drizzle over fully cooled cookies. Set 10 to 15 minutes before storing.
