Cinnamon Roll French Toast Roll Ups

Flattened sandwich bread rolled around cinnamon butter, pan fried until golden, tossed in cinnamon sugar, and finished with a cream cheese glaze.

Ingredients
  

8 slices white sandwich bread, crusts trimmed
3 tablespoons unsalted butter, softened
1/3 cup packed light brown sugar
1 and 1/2 teaspoons ground cinnamon
1/8 teaspoon fine salt
2 large eggs
3 tablespoons whole milk
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
2 tablespoons unsalted butter, for the skillet
1/4 cup granulated sugar plus 1 teaspoon cinnamon, for coating
3 ounces cream cheese, softened
1/2 cup powdered sugar, sifted
2 to 3 tablespoons whole milk
1/2 teaspoon vanilla extract

Equipment

  • 1 a rolling pin
  • 1 a small mixing bowl for the cinnamon butter
  • 1 a shallow wide bowl for the custard
  • 1 a flat plate for the cinnamon sugar coating
  • 1 a medium mixing bowl for the glaze
  • 1 a whisk
  • 1 an offset spatula or butter knife
  • 1 tongs
  • 1 a large skillet with a light colored nonstick surface so you can read the browning accurately.

Method
 

Trim crusts and roll each bread slice flat with a rolling pin until half its original thickness.
    Stir softened butter, brown sugar, cinnamon, and salt into a smooth paste and spread thinly on each slice, leaving a quarter inch bare along one long edge.
      Roll each slice tightly from the coated edge and rest seam side down for 3 minutes.
        Whisk eggs, milk, vanilla, and cinnamon until completely smooth with no white streaks.
          Dip each roll for 2 seconds, turning once, and let excess drip off.
            Cook 4 at a time in foaming butter over medium heat, seam side down for 90 seconds, then turning to brown all sides, about 5 minutes total.
              Roll the hot rolls in cinnamon sugar immediately, then rest on a wire rack.
                Beat cream cheese smooth, add powdered sugar, vanilla, and milk to a ribbon consistency, and drizzle over the warm roll ups.
