Cinnamon-Swirled Apple Bread

A moist, one-bowl apple bread with a cinnamon sugar swirl through the center and a caramelized brown sugar pecan crust on top.

Ingredients
  

Batter:
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 and 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
2 large eggs, room temperature
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1/2 cup neutral oil
1/4 cup whole milk
1 teaspoon vanilla extract
2 cups peeled and grated apple, squeezed of excess moisture
Cinnamon Swirl:
3 tablespoons brown sugar
1 teaspoon cinnamon
Brown Sugar Pecan Crust:
3 tablespoons brown sugar
1/3 cup chopped pecans
1/2 teaspoon cinnamon
1 tablespoon cold unsalted butter, cubed

Equipment

  • 1 standard 9 by 5 inch loaf pan
  • 1 large mixing bowl
  • 1 box grater
  • 1 small bowl for the cinnamon swirl and topping

Method
 

Preheat oven to 350 degrees Fahrenheit. Grease and line a 9 by 5 inch loaf pan.
    Grate apples, squeeze out excess moisture, set aside.
      Whisk dry ingredients in a large bowl. Whisk wet ingredients separately. Fold together until just combined. Fold in grated apple.
        Pour half the batter into pan, sprinkle cinnamon swirl mixture, top with remaining batter.
          Rub topping ingredients together into loose crumble, scatter over batter.
            Bake 55 to 65 minutes until a toothpick comes out with moist crumbs. Cool 15 minutes in pan, then 20 minutes on a rack before slicing.
