Ingredients (Pumpkin Base): 1 can pumpkin puree, 3/4 cup sugar, 3 eggs, 1 cup evaporated milk, 1 1/2 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp cloves, 1/4 tsp salt, 1 tsp vanilla Ingredients (Streusel): 1 cup rolled oats, 3/4 cup flour, 1/2 cup brown sugar, 1/2 tsp cinnamon, 1/4 tsp salt, 1/2 cup cold cubed butter, 1/3 cup chopped pecans

Equipment

  • 1 9x9 inch baking dish
  • 2 Mixing bowls
  • 1 whisk
  • 1 pastry cutter or fork for streusel

Method
 

Preheat oven to 350°F. Grease 9x9 inch baking dish.
    Whisk all pumpkin base ingredients until completely smooth. Pour into dish and spread evenly.
      Combine oats, flour, brown sugar, cinnamon, salt. Cut in cold butter until coarse clusters form. Stir in pecans.
        Scatter streusel evenly over pumpkin base, covering completely.
          Bake 40 to 45 minutes until streusel is golden and filling is set with a slight jiggle.
            Cool 30 minutes before serving.
