Crispy Golden German Potato Pancakes with Applesauce and Sour Cream

Ingredients
  

2 pounds russet potatoes, peeled
1 small yellow onion
2 large eggs
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon baking powder (optional)
1/2 cup neutral oil, for frying
Applesauce and sour cream, to serve

Equipment

  • 1 box grater or a food processor with a grating disc
  • 1 fine mesh sieve or colander
  • 2 Mixing bowls
  • 1 large heavy skillet or cast iron pan
  • 1 slotted spatula
  • 1 wire rack set over a tray

Method
 

Grate the potatoes and onion on the large holes of a box grater.
    Press the grated mix in a sieve to squeeze out all the liquid, reserving the starch.
      Stir in eggs, flour, salt, pepper, and baking powder.
        Heat a quarter inch of oil in a heavy skillet over medium-high.
          Form thin rounds and fry 3 to 4 minutes per side until deep golden.
            Drain on a wire rack and salt while hot.
              Serve hot with applesauce and sour cream.
