Ingredients
  

4 day-old croissants
1/3 cup almond paste, softened
2 tablespoons unsalted butter, softened, for the almond cream
2 tablespoons granulated sugar, for the almond cream
2 large eggs
1/2 cup whole milk
1/4 cup heavy cream
1/2 teaspoon almond extract
1/2 cup sliced almonds
3 tablespoons unsalted butter, for the skillet
Powdered sugar, for dusting

Equipment

  • 1 large enameled cast iron skillet
  • 1 small mixing bowl, for the almond cream
  • 1 wide shallow dish
  • 1 whisk
  • 1 butter knife

Method
 

Mash together the almond paste, butter, and sugar for the filling.
    Split each croissant and spread the almond cream inside.
      Whisk the eggs, milk, cream, and almond extract together.
        Dip each croissant briefly in the custard.
          Press sliced almonds onto the custard-coated surface.
            Cook in a buttered skillet until golden on both sides.
              Plate and dust with powdered sugar before serving.
