Ingredients
  

2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 3/4 cups whole milk
2 large eggs, separated
1/2 cup unsalted butter, melted, plus extra for the waffle iron
1 teaspoon vanilla extract
Warm maple syrup and softened butter, for serving

Equipment

  • 1 standard waffle iron
  • 1 large mixing bowl
  • 1 medium mixing bowl
  • 1 small mixing bowl
  • 1 hand mixer or whisk
  • 1 rubber spatula

Method
 

Whisk the dry ingredients together in one bowl.
    Whisk the egg yolks, milk, melted butter, and vanilla in a separate bowl.
      Combine wet and dry ingredients until just mixed.
        Whip the egg whites to soft peaks.
          Fold the whipped whites gently into the batter.
            Preheat the waffle iron and brush with butter.
              Ladle in the batter and close the lid.
                Cook until deeply golden, then serve warm.
