Ingredients
  

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
3 tablespoons hot chocolate mix
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1/4 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
12 to 14 large marshmallows, halved
Powdered sugar for dusting

Equipment

  • 1 stand mixer or hand mixer
  • 2 Mixing bowls
  • 1 baking sheet
  • 1 parchment paper
  • 1 Wire cooling rack
  • 1 cookie scoop or tablespoon.

Method
 

Preheat oven to 350°F. Line baking sheets with parchment paper.
    Whisk flour, cocoa, hot chocolate mix, baking soda, and salt together in a bowl.
      Beat butter and sugars until fluffy, about 2 minutes. Add egg and vanilla, beat until smooth.
        Mix in dry ingredients on low just until combined. Fold in chocolate chips.
          Scoop dough onto prepared sheets and bake for 8 minutes.
            Press one marshmallow half into each cookie center and return to oven for 2 to 3 more minutes.
              Cool on pan 5 minutes, transfer to wire rack, dust with powdered sugar.
