Ingredients
  

2 cups all-purpose flour
1 and 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup light brown sugar
3 large eggs
2 tsp vanilla extract
1 cup buttermilk
1/3 cup neutral oil
Frosting:
3/4 cup creamy peanut butter
1/2 cup unsalted butter, softened
2 cups powdered sugar, sifted
1/4 cup heavy cream
1 tsp vanilla extract
Pinch of salt

Equipment

  • 2  9-inch round cake pans or one 9x13-inch baking pan
  • 2  large mixing bowls
  • 1 hand mixer or stand mixer
  • 1 Wire cooling rack
  • 1 offset spatula for frosting

Method
 

Preheat oven to 350F. Grease and line two 9-inch cake pans.
    Whisk flour, baking powder, baking soda, and salt in a large bowl.
      Beat butter, peanut butter, and both sugars until creamy, about 3 minutes.
        Add eggs one at a time, then vanilla.
          Alternate dry ingredients with buttermilk and oil, beginning and ending with flour.
            Divide into pans. Bake 30 to 35 minutes until a toothpick comes out clean.
              Cool fully before frosting.
                Beat frosting ingredients until smooth and fluffy. Frost assembled layers.
