Sweet Hawaiian rolls grilled until caramelized, topped with grilled pineapple, whipped cream, toasted coconut, and macadamia nuts for a tropical brunch.

Ingredients
  

8 sweet Hawaiian rolls, split in half
2 large eggs
1/2 cup whole milk
1/4 cup coconut milk
1 teaspoon vanilla extract
4 canned or fresh pineapple rings
1/4 cup shredded coconut
1/4 cup chopped macadamia nuts, toasted
Whipped cream, for topping
Warm maple syrup, for serving

Equipment

  • 1 ridged cast iron grill pan
  • 1 wide shallow dish
  • 1 whisk
  • 1 small dry skillet, for toasting coconut and macadamia nuts

Method
 

Toast the coconut and macadamia nuts separately.
    Whisk the eggs, milk, coconut milk, and vanilla together.
      Dip each roll half briefly into the custard.
        Cook on a hot grill pan until ridge marks form.
          Grill the pineapple rings alongside until char marks appear.
            Arrange everything on a plate and add whipped cream.
              Press the macadamia nuts into the whipped cream.
                Sprinkle with toasted coconut and drizzle with syrup.
