Incredible Coca Cola Cake That Melts in Your Mouth

Ingredients
  

Cake:
2 cups all-purpose flour
2 cups granulated sugar
1 cup unsalted butter
1 cup classic Coca-Cola
3 tbsp unsweetened cocoa powder
2 large eggs
1/2 cup full-fat buttermilk
1 tsp vanilla extract
1 tsp baking soda
1 1/2 cups mini marshmallows
Frosting:
1/2 cup unsalted butter
1/3 cup Coca-Cola
3 tbsp unsweetened cocoa powder
4 cups sifted powdered sugar
1 tsp vanilla extract
pinch of salt

Equipment

  • 1 9x13-inch baking pan
  • 1 large heavy-bottomed saucepan
  • 1 large mixing bowl
  • 1 medium mixing bowl
  • 1 whisk
  • 1 rubber spatula
  • 1  electric hand mixer or stand mixer
  • 1 sifter for powdered sugar

Method
 

Preheat oven to 350°F. Grease and cocoa-dust a 9x13-inch baking pan.
    Melt butter with Coca-Cola and cocoa in a saucepan over medium heat until smooth. Bring to a brief boil then remove from heat.
      Whisk flour and sugar in a large bowl. Pour hot Coca-Cola mixture over and stir well.
        Add mini marshmallows and stir into the warm batter.
          Beat eggs, buttermilk, vanilla, and baking soda together. Fold into batter until just combined.
            Pour into pan and bake 30 to 35 minutes until toothpick comes out with moist crumbs.
              Ten minutes before cake is done, make frosting: melt butter with Coca-Cola and cocoa, whisk in sifted powdered sugar, vanilla, and salt.
                Pour warm frosting over warm cake immediately. Spread evenly and allow to cool and set before slicing.
