Moist Avocado Bread

A one-bowl quick bread made with mashed avocado instead of oil, topped with a toasted seed crust and finished with a honey lime glaze.

Ingredients
  

Bread:
2 cups all-purpose flour
1 and 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cardamom
1/4 teaspoon cinnamon
2 large ripe avocados, mashed smooth (about 1 cup)
2 large eggs, room temperature
3/4 cup granulated sugar
1/4 cup brown sugar
1/3 cup whole milk
2 teaspoons fresh lime juice
1 teaspoon lime zest
1 teaspoon vanilla extract
Toasted Seed Topping:
3 tablespoons pepitas
2 tablespoons sesame seeds
1 tablespoon sunflower seeds
1 tablespoon granulated sugar
1 pinch salt
Honey Lime Glaze:
3/4 cup powdered sugar, sifted
1 tablespoon fresh lime juice
1 teaspoon honey
1 teaspoon lime zest
1 to 2 teaspoons milk

Equipment

  • 1 standard 9 by 5 inch loaf pan
  • 1 large mixing bowl
  • 1 fork for mashing the avocado
  • 1 small bowl for the glaze
  • 1 wire rack set over a baking sheet for glazing.

Method
 

Preheat the oven to 350 degrees Fahrenheit. Grease and line a 9 by 5 inch loaf pan.
    Mash avocados until completely smooth. Add lime juice immediately. Whisk in eggs, sugars, milk, lime zest, and vanilla.
      Fold in sifted flour, baking powder, baking soda, salt, cardamom, and cinnamon until just combined.
        Pour into pan, smooth top. Toss seeds with sugar and salt, scatter over batter and press lightly.
          Bake for 55 to 65 minutes until the toothpick comes out with moist crumbs. Cool for 15 minutes in the pan then on the rack.
            Mix glaze, drizzle over warm loaf. Set 15 minutes before slicing.
