Moist Cinnamon Coffee Cake with Golden Streusel Topping

Ingredients
  

2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 cup sour cream
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup sugar + 1 tablespoon cinnamon (swirl)
1/2 cup flour, 1/3 cup brown sugar, 1 teaspoon cinnamon, 1/4 cup cold butter, pinch of salt (streusel)

Equipment

  • 1 9-inch round cake pan or 8x8-inch square pan
  • 2 two mixing bowls
  • 1 whisk
  • 1 rubber spatula
  • 1 Pastry cutter or fork

Method
 

Preheat oven to 350 degrees F. Grease and flour a 9-inch round pan.
    Make streusel: mix flour, brown sugar, cinnamon, salt, work in cold butter until clumpy. Refrigerate.
      Cream butter and sugar. Add eggs one at a time, then vanilla and sour cream.
        Fold in flour, baking powder, baking soda, and salt until just combined.
          Spread half the batter in pan. Top with cinnamon sugar mixture. Add remaining batter and spread to cover.
            Scatter chilled streusel over the top. Bake 40 to 45 minutes until golden and a toothpick comes out with moist crumbs.
              Cool in pan 20 minutes before slicing.
