Ingredients
  

2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon fine salt
2 teaspoons granulated sugar
3/4 cup whole milk, room temperature
3 tablespoons unsalted butter, melted and cooled
2 tablespoons unsalted butter, for the skillet

Equipment

  • 1 10 to 12 inch cast iron skillet or heavy-bottomed frying pan
  • 1 one large mixing bow
  • 1 a spatula or flat turner for flipping.

Method
 

Whisk flour, baking powder, salt, and sugar together. Make a well in the center.
    Add melted butter and milk. Mix until a soft, slightly sticky dough just comes together.
      Press dough by hand into a round disc 3/4 inch thick and 9 to 10 inches across.
        Melt skillet butter in a cast iron skillet over medium-low heat. Add bannock disc.
          Cook first side 8 to 10 minutes until deep golden. Flip and cook second side 8 to 10 minutes.
            Rest 5 minutes before tearing or slicing. Serve warm.
