Glazed Apple Fritter Bread

A tender quick bread layered with cinnamon-coated diced apples and a brown sugar swirl, topped with a crackled vanilla glaze straight from the oven.

Ingredients
  

Cinnamon Apple Filling:
2 medium apples, peeled and diced
2 tablespoons granulated sugar
1 teaspoon cinnamon
Batter:
2 cups all-purpose flour
1 and 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
2 large eggs, room temperature
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 cup sour cream, room temperature
1/3 cup neutral oil
1 teaspoon vanilla extract
1/4 cup whole milk
Cinnamon Swirl:
3 tablespoons brown sugar
1 teaspoon cinnamon
Vanilla Glaze:
1 cup powdered sugar, sifted
2 to 3 tablespoons whole milk
1/2 teaspoon vanilla extract
1 pinch salt

Equipment

  • 1 standard 9 by 5 inch loaf pan
  • 2 Mixing bowls
  • 1 small bowl for the swirl
  • 1 wire rack set over a baking sheet for glazing.

Method
 

Preheat the oven to 350 degrees Fahrenheit. Grease and line a 9 by 5 inch loaf pan.
    Toss diced apples with sugar and cinnamon. Set aside 5 minutes.
      Whisk dry ingredients. Whisk wet ingredients separately. Fold together until just combined.
        Layer one third batter, half apples, half swirl mixture, one third batter, remaining apples, remaining swirl, final third batter.
          Bake for 55 to 65 minutes until the toothpick comes out with moist crumbs. Cool for 15 minutes in a pan then on a wire rack.
            Whisk glaze ingredients, pour over warm loaf. Set 15 minutes before slicing.
