Ingredients
  

3 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1/4 cup whole milk
1 teaspoon pure vanilla extract
1/2 teaspoon nutmeg
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Equipment

  • 1 large mixing bowl
  • 1 Hand or stand mixer
  • 1 Rolling pin and flat surface dusted with flour
  • 1 Round cookie cutter or a glass rim (approximately 3 inches diameter)•
  • 2 Large baking sheets lined with parchment paper
  • 1 Wire cooling rack

Method
 

Preheat oven to 350°F. Line two baking sheets with parchment.
    Cream butter and sugar for 3 minutes until pale and fluffy.
      Add eggs one at a time, then milk and vanilla. Mix until combined.
        Whisk dry ingredients separately, then fold into wet mixture until a soft dough forms.
          Roll to 1/4 inch thickness on a floured surface and cut into 3-inch rounds.
            Bake for 12 to 14 minutes until edges are barely golden. Centers will look slightly underdone.
              Cool on a wire rack for at least 10 minutes before serving.
